Ingredients
For the Stir-Fry:
- 2 packs instant ramen noodles (discard seasoning packets)
- 2 tbsp vegetable oil (divided)
- 2 chicken breasts, thinly sliced
- 2 garlic cloves, minced
- 1 small onion, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1 bell pepper, sliced
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- 1 tsp sugar
- 1/4 cup water
For Garnish:
- Sesame seeds
- Green onions, chopped
Instructions
- Cook the Noodles:
- Boil the ramen noodles for 2-3 minutes until just tender.
- Drain and set aside.
- Cook the Chicken:
- Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat.
- Add the chicken slices and cook for 4-5 minutes, until golden and fully cooked. Remove and set aside.
- Stir-Fry the Vegetables:
- Add the remaining 1 tbsp of vegetable oil to the same pan.
- Sauté garlic and onion until fragrant, about 1 minute.
- Add broccoli, carrot, and bell pepper, stir-frying for 3-4 minutes until tender-crisp.
- Make the Sauce:
- In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, sugar, and water.
- Combine Everything:
- Pour the sauce over the vegetables and stir well.
- Return the cooked chicken to the pan and toss to combine.
- Add the cooked noodles and stir for 1-2 minutes until evenly coated.
- Serve:
- Garnish with sesame seeds and green onions. Serve immediately.
