Ingredients

For the Stir-Fry:

  • 2 packs instant ramen noodles (discard seasoning packets)
  • 2 tbsp vegetable oil (divided)
  • 2 chicken breasts, thinly sliced
  • 2 garlic cloves, minced
  • 1 small onion, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 bell pepper, sliced

For the Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 cup water

For Garnish:

  • Sesame seeds
  • Green onions, chopped

Instructions

  • Cook the Noodles:
    • Boil the ramen noodles for 2-3 minutes until just tender.
    • Drain and set aside.
  • Cook the Chicken:
    • Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat.
    • Add the chicken slices and cook for 4-5 minutes, until golden and fully cooked. Remove and set aside.
  • Stir-Fry the Vegetables:
    • Add the remaining 1 tbsp of vegetable oil to the same pan.
    • Sauté garlic and onion until fragrant, about 1 minute.
    • Add broccoli, carrot, and bell pepper, stir-frying for 3-4 minutes until tender-crisp.
  • Make the Sauce:
    • In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, sugar, and water.
  • Combine Everything:
    • Pour the sauce over the vegetables and stir well.
    • Return the cooked chicken to the pan and toss to combine.
    • Add the cooked noodles and stir for 1-2 minutes until evenly coated.
  • Serve:
    • Garnish with sesame seeds and green onions. Serve immediately.

  • Vegetable Options: Feel free to add mushrooms, snap peas, or zucchini for variety.
