Ingredients
- 2 tbsp olive oil
- 1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into chunks
- 1 medium onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 3 medium potatoes, peeled and cubed
- 4 cups (950 ml) chicken broth
- 1 cup (150 g) frozen peas
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- ½ tsp smoked paprika
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Sear the Chicken:
Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken chunks and cook until golden brown on all sides. Remove and set aside. - Cook the Vegetables:
Add the remaining olive oil to the pot. Sauté the onion, carrots, and celery for about 5 minutes, until softened. Stir in the minced garlic and cook for 1 minute. - Simmer the Stew:
Add the potatoes, chicken broth, tomato paste, thyme, bay leaf, smoked paprika, salt, and pepper. Stir to combine. Bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally, until the potatoes are tender. - Add Chicken and Peas:
Return the seared chicken to the pot, along with the frozen peas. Simmer uncovered for an additional 5 minutes. - Finish and Serve:
Remove the bay leaf, taste, and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
