Ingredients

  • 2 tbsp olive oil
  • 1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 medium onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 4 cups (950 ml) chicken broth
  • 1 cup (150 g) frozen peas
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • ½ tsp smoked paprika
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  • Sear the Chicken:
    Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken chunks and cook until golden brown on all sides. Remove and set aside.
  • Cook the Vegetables:
    Add the remaining olive oil to the pot. Sauté the onion, carrots, and celery for about 5 minutes, until softened. Stir in the minced garlic and cook for 1 minute.
  • Simmer the Stew:
    Add the potatoes, chicken broth, tomato paste, thyme, bay leaf, smoked paprika, salt, and pepper. Stir to combine. Bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally, until the potatoes are tender.
  • Add Chicken and Peas:
    Return the seared chicken to the pot, along with the frozen peas. Simmer uncovered for an additional 5 minutes.
  • Finish and Serve:
    Remove the bay leaf, taste, and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.

Notes

  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.
  • Freezing: Cool completely, then freeze in freezer-safe containers for up to 3 months.
  • Thickening: For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the stew during the final 5 minutes of cooking.
