Ingredients

  • 12 oz rigatoni pasta

  • 1 lb Italian sausage (mild or spicy)

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 tsp Italian seasoning

  • ½ tsp red pepper flakes (optional)

  • Salt & pepper, to taste

  • ½ cup heavy cream

  • ½ cup grated Parmesan cheese

  • Fresh basil, for garnish

Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Cook rigatoni according to package directions until al dente.

  3. Drain and set aside.

2. Cook the Sausage & Aromatics

  1. In a large skillet over medium heat, cook the Italian sausage, breaking it apart with a spoon, until browned.

  2. Add the chopped onion and cook for 3-4 minutes, until softened.

  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.

3. Make the Sauce

  1. Pour in the crushed tomatoes and stir well.

  2. Add Italian seasoning, red pepper flakes (if using), salt, and pepper.

  3. Simmer uncovered for 10 minutes, stirring occasionally.

4. Add Cream & Cheese

  1. Reduce the heat to low and stir in the heavy cream.

  2. Add grated Parmesan cheese and mix until smooth and creamy.

5. Combine & Serve

  1. Add the cooked rigatoni to the sauce and toss until well coated.

  2. Garnish with fresh basil and extra Parmesan cheese.

  3. Serve hot and enjoy!

Notes

  • For a spicier version, use hot Italian sausage and increase the red pepper flakes.

  • For a lighter option, substitute half-and-half for heavy cream.

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.

  • Freezing: Freeze the cooled pasta in a sealed container for up to 2 months. Thaw overnight before reheating.

  • Pasta Alternatives: You can swap rigatoni for penne, ziti, or fusilli.
