Ingredients
- 2 lbs (900 g) baby potatoes, halved or quartered
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- ½ tsp paprika
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare Potatoes: Wash and dry the baby potatoes, then halve or quarter them for even cooking.
- Season Potatoes: In a large bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Toss the potatoes in the mixture until evenly coated.
- Roast Potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Garnish and Serve: Remove from the oven, transfer to a serving dish, and garnish with fresh parsley if desired. Serve hot.
