Crispy on the outside and tender on the inside, these Garlic Herb Roasted Potatoes are a simple yet flavorful side dish. Perfectly seasoned with a blend of garlic, rosemary, thyme, and paprika, they’re great for pairing with any meal or enjoying as a snack.


Ingredients

  • 2 lbs (900 g) baby potatoes, halved or quartered
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Potatoes: Wash and dry the baby potatoes, then halve or quarter them for even cooking.
  3. Season Potatoes: In a large bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Toss the potatoes in the mixture until evenly coated.
  4. Roast Potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  5. Garnish and Serve: Remove from the oven, transfer to a serving dish, and garnish with fresh parsley if desired. Serve hot.
