Description

A nutritious and delicious cake made with oats, Greek yogurt, and plums, perfect for a guilt-free indulgence.


Ingredients

  • 130g rolled oats
  • 160ml hot water
  • 150g Greek yogurt (10% fat)
  • 2 eggs
  • 60g erythritol sweetener
  • 2 tablespoons sunflower oil
  • 60g walnuts
  • 150g dried prunes
  • 40g almond flour
  • Pinch of salt
  • 6g baking powder
  • 1/2 teaspoon baking soda

Additional Items:

  • Baking pan 23 x 10 cm / 9 x 4 inches
  • Sliced almonds for decoration

Instructions

  1. Preheat your oven to 180°C/360°F and grease a baking pan (23 x 10 cm / 9 x 4 inches).
  2. In a bowl, combine the rolled oats with hot water and let them soak for a few minutes.
  3. In another bowl, whisk together Greek yogurt, eggs, erythritol sweetener, and sunflower oil until smooth.
  4. Gradually add the soaked oats, almond flour, chopped walnuts, dried prunes, salt, baking powder, and baking soda to the wet ingredients, mixing well.
  5. Pour the batter into the prepared baking pan and spread it out evenly.
  6. Decorate the top with sliced almonds for an attractive finish.
  7. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and let it cool before slicing and serving.
