Ingredients
- 130g rolled oats
- 160ml hot water
- 150g Greek yogurt (10% fat)
- 2 eggs
- 60g erythritol sweetener
- 2 tablespoons sunflower oil
- 60g walnuts
- 150g dried prunes
- 40g almond flour
- Pinch of salt
- 6g baking powder
- 1/2 teaspoon baking soda

- Baking pan 23 x 10 cm / 9 x 4 inches
- Sliced almonds for decoration
Instructions
- Preheat your oven to 180°C/360°F and grease a baking pan (23 x 10 cm / 9 x 4 inches).
- In a bowl, combine the rolled oats with hot water and let them soak for a few minutes.
- In another bowl, whisk together Greek yogurt, eggs, erythritol sweetener, and sunflower oil until smooth.
- Gradually add the soaked oats, almond flour, chopped walnuts, dried prunes, salt, baking powder, and baking soda to the wet ingredients, mixing well.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Decorate the top with sliced almonds for an attractive finish.
- Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool before slicing and serving.
