Description
Hobo casserole is a simple, budget-friendly dish made with layers of ground beef, potatoes, creamy mushroom sauce, and melted cheese. It’s an easy, one-pan meal perfect for busy weeknights and family dinners.
Ingredients
- 1 lb (450g) ground beef
- 1 small onion, diced
- 4 medium potatoes, thinly sliced
- 1 can (10.5 oz / 300g) cream of mushroom soup
- ½ cup (120ml) milk
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 cup (120g) shredded cheddar cheese
- 1 tbsp butter (for greasing the dish)
Instructions
Step 1: Prepare the Ingredients
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter.
- In a skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease. Stir in garlic powder, salt, and black pepper.
Step 2: Assemble the Casserole
- Layer half of the sliced potatoes evenly in the greased baking dish.
- Spread the cooked ground beef mixture over the potatoes.
- Add the remaining potato slices on top.
- In a bowl, whisk together cream of mushroom soup and milk until smooth. Pour evenly over the casserole.
Step 3: Bake
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil, sprinkle cheddar cheese over the top, and bake uncovered for 10-15 minutes, until the potatoes are tender and the cheese is melted.
- Let cool slightly before serving.
Notes
- Potato Thickness: Thinly sliced potatoes ensure even cooking. Use a mandoline for uniform slices.
- Cheese Variations: Try mozzarella, Monterey Jack, or Colby cheese for a different flavor.
- Soup Alternatives: Use cream of chicken or cheddar soup instead of cream of mushroom.
- Make Ahead: Assemble the casserole in advance, refrigerate for up to 24 hours, and bake when ready.
- Freezing: Assemble but do not bake, cover tightly, and freeze for up to 3 months. Thaw overnight before baking.
