Description

Hobo casserole is a simple, budget-friendly dish made with layers of ground beef, potatoes, creamy mushroom sauce, and melted cheese. It’s an easy, one-pan meal perfect for busy weeknights and family dinners.


Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 4 medium potatoes, thinly sliced
  • 1 can (10.5 oz / 300g) cream of mushroom soup
  • ½ cup (120ml) milk
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup (120g) shredded cheddar cheese
  • 1 tbsp butter (for greasing the dish)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter.
  2. In a skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease. Stir in garlic powder, salt, and black pepper.

Step 2: Assemble the Casserole

  1. Layer half of the sliced potatoes evenly in the greased baking dish.
  2. Spread the cooked ground beef mixture over the potatoes.
  3. Add the remaining potato slices on top.
  4. In a bowl, whisk together cream of mushroom soup and milk until smooth. Pour evenly over the casserole.

Step 3: Bake

  1. Cover the dish with foil and bake for 45 minutes.
  2. Remove the foil, sprinkle cheddar cheese over the top, and bake uncovered for 10-15 minutes, until the potatoes are tender and the cheese is melted.
  3. Let cool slightly before serving.

Notes

  • Potato Thickness: Thinly sliced potatoes ensure even cooking. Use a mandoline for uniform slices.
  • Cheese Variations: Try mozzarella, Monterey Jack, or Colby cheese for a different flavor.
  • Soup Alternatives: Use cream of chicken or cheddar soup instead of cream of mushroom.
  • Make Ahead: Assemble the casserole in advance, refrigerate for up to 24 hours, and bake when ready.
  • Freezing: Assemble but do not bake, cover tightly, and freeze for up to 3 months. Thaw overnight before baking.
