Ingredients

  • 34 lb (1.4–1.8 kg) chuck roast
  • 3 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • ½ cup (120 ml) beef broth
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preparation
    • Preheat your oven to 275°F (135°C).
    • Rub the chuck roast with olive oil to coat evenly.
  2. Seasoning
    • In a small bowl, mix kosher salt, black pepper, garlic powder, onion powder, and thyme.
    • Generously season the roast on all sides with the spice mixture.
  3. Searing
    • Heat a skillet over medium-high heat.
    • Sear the roast on all sides for about 2–3 minutes per side until a golden crust forms.
  4. Roasting
    • Place the seared roast in a roasting pan.
    • Pour beef broth and Worcestershire sauce around the roast in the pan.
    • Cover tightly with aluminum foil to retain moisture.
    • Roast in the oven for 2.5–3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  5. Resting and Slicing
    • Remove the roast from the oven and let it rest, covered, for 15 minutes.
    • Slice thinly against the grain for the most tender results.

  • For Well-Done Roast: Extend the cooking time until the internal temperature reaches 145°F (63°C).
