Ingredients
For the cookies:

- ¾ cup (150 g) granulated sugar

- 2 tbsp (12 g) cocoa powder

- 4 oz (113 g) cream cheese, softened
- 2 tbsp (30 g) unsalted butter, softened
- 1 cup (120 g) powdered sugar
- ½ tsp vanilla extract
Instructions
For the Cookies
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and brown sugar together until fluffy.
- Beat in the egg, vanilla extract, and red food coloring until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 1 ½ inches apart.
- Bake for 9-11 minutes, or until the edges are set and the centers are slightly soft. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
For the Frosting
- In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
- Add powdered sugar and vanilla extract, mixing until the frosting is thick and spreadable.
Assembling the Cookies
- Spread or pipe the frosting onto the cooled cookies. Garnish with sprinkles or chocolate shavings, if desired.
