  • 3 cups (375 g) all-purpose flour
  • ¾ cup (150 g) brown sugar
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup (170 g) unsalted butter, softened
  • ¾ cup (180 ml) molasses
  • 1 large egg
  • Royal icing and candy decorations (optional, for decorating)

  1. Prepare the Dry Mix
    In a large bowl, whisk together flour, brown sugar, ginger, cinnamon, cloves, baking soda, and salt.
  2. Incorporate Butter
    Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Form the Dough
    Mix in molasses and the egg until a soft dough forms. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  4. Preheat the Oven
    Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Roll and Cut
    Roll out the chilled dough on a floured surface to ¼-inch thickness. Use gingerbread man cutters to shape the cookies and place them on prepared baking sheets.
  6. Bake
    Bake for 8-10 minutes, or until the edges are firm but the centers remain soft. Cool on baking sheets for 5 minutes before transferring to a wire rack.
  7. Decorate
    Once completely cooled, decorate the cookies with royal icing and candy decorations as desired.
