Description

These sourdough granola bars are soft, chewy, and packed with peanut butter and chocolate chips. Made with sourdough discard, oats, and natural sweeteners, they’re a wholesome snack perfect for breakfast, lunchboxes, or a quick energy boost.


Ingredients

  • ½ cup (120 g) sourdough discard
  • 1 cup (100 g) rolled oats
  • ½ cup (125 g) peanut butter
  • ⅓ cup (80 ml) honey or maple syrup
  • ¼ cup (30 g) chopped nuts (optional)
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup (90 g) chocolate chips

Instructions

  • Preheat and Prepare
    Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.

  • Mix Wet Ingredients
    In a mixing bowl, combine sourdough discard, peanut butter, honey (or maple syrup), cinnamon, and salt. Stir until smooth.

  • Add Dry Ingredients
    Stir in rolled oats, chopped nuts (if using), and half of the chocolate chips until fully combined.

  • Press into Pan
    Spread the mixture evenly in the prepared baking dish, pressing it firmly.

  • Bake
    Bake for 18–20 minutes, or until the edges turn slightly golden.

  • Add Extra Chocolate
    Sprinkle the remaining chocolate chips on top immediately after baking. Let them soften, then press them gently into the bars.

  • Cool and Slice
    Allow the bars to cool completely before slicing to prevent crumbling.

Notes

  • Storage: Keep in an airtight container at room temperature for up to 5 days, or refrigerate for 1 week.
  • Freezing: Wrap individual bars in parchment paper and freeze for up to 3 months. Thaw at room temperature before eating.
  • Customization: Add chia seeds, flaxseeds, dried fruit, or coconut for extra texture and flavor.
  • Nut-Free Option: Substitute peanut butter with sunflower seed butter and omit the nuts.
