Description

This Instant Pot Chicken Marsala is a quick and flavorful dish featuring tender chicken, mushrooms, and a savory Marsala wine sauce. Perfect for a busy weeknight or a special dinner, it’s a restaurant-quality meal made easy with your Instant Pot.

Ingredients

  • 4 boneless, skinless chicken breasts (or 6 chicken thighs)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced
  • 8 oz (225 g) cremini mushrooms, sliced
  • 1 cup (240 ml) Marsala wine
  • ½ cup (120 ml) chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tbsp cornstarch
  • 1 tbsp water
  • Salt and pepper to taste

Instructions

  • Season Chicken: Season chicken breasts or thighs with salt and pepper.
  • Sear Chicken: Set the Instant Pot to “Sauté” mode. Heat olive oil and sear chicken for 3 minutes per side until golden. Remove and set aside.
  • Sauté Vegetables: Add butter, onion, garlic, and mushrooms to the pot. Sauté for 3-4 minutes until softened.
  • Make the Sauce: Pour in Marsala wine and chicken broth, scraping up browned bits from the bottom of the pot. Stir in thyme and parsley.
  • Pressure Cook: Return chicken to the pot. Secure the lid and set the Instant Pot to “Manual” or “Pressure Cook” mode for 10 minutes.
  • Thicken the Sauce: After cooking, quick-release the pressure. Remove chicken and set aside. Mix cornstarch with water to make a slurry, then stir it into the sauce while the pot is on “Sauté” mode. Cook for 2-3 minutes until thickened.
  • Serve: Serve chicken with the Marsala sauce drizzled over the top.

Notes

  • Substitutions: Replace Marsala wine with dry sherry or Madeira if needed.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freezing: Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
  • Serving Suggestions: Pair with mashed potatoes, pasta, or rice, and a side of steamed vegetables.
