Ingredients

  • 1 cup (100 g) rolled oats or prepared oat flour
  • 2 medium or 4 small apples
  • 3.5 ounces (100 g) raisins, rinsed in hot water
  • 2 ripe bananas
  • 2 eggs
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • Cooking spray or oil, for greasing
  • Maple syrup or honey, for serving (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Oats: If using rolled oats, blend them in a food processor or blender until you achieve a fine flour consistency. If using oat flour, skip this step.
  3. Prepare the Apples: Peel and core the apples. Grate them using a grater or food processor. Set aside.
  4. Mix the Wet Ingredients: In a large mixing bowl, mash the bananas until smooth. Add the eggs to the mashed bananas and whisk together until well combined.
  5. Combine Ingredients: Add the oat flour (or blended oats) to the banana and egg mixture. Stir in the grated apples, rinsed raisins, ground cinnamon, and baking powder. Mix until all the ingredients are well incorporated.
  6. Prepare the Baking Pan: Lightly grease a baking pan (approximately 9-inch round or 8×8-inch square) with cooking spray or a small amount of oil.
  7. Bake the Cake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Serve the cake warm or at room temperature. Drizzle with maple syrup or honey if desired.
